Teff and Pear Teacake

Ingredients

  • 125 g self-raising flour

  • 100 g Brown Teff Flour

  • 1 teaspoon baking powder

  • 50 g brown sugar

  • 2 eggs (or egg replacement)

  • 450 g chopped Beurré Bosc pears

  • 4 tablespoon olive oil

  • 1 cup almond milk (or any milk you prefer)

  • 20 g almonds silvered or flaked

Method

  1. Preheat oven to 180 degrees. Line pan with baking paper

  2. Sift flour, teff and baking powder

  3. Add chopped pear and sugar

  4. Whisk eggs, oil and milk in a separate bowl

  5. Combine dry and wet ingredients. Fold gently

  6. Pour into pan. Scatter flaked almonds on top of mixture

  7. Bake for 45-50 minutes or until golden brown (check with a skewer to see if it comes out clean)

  8. Place on a cooling rack

  9. Slice, serve & ENJOY!
